You may have heard of chia seeds and chia pudding since these nutrition powerhouses have become so trendy – but do you actually know what they are?
Chia seeds deliver serious plant power. These little seeds are a source of protein, fibre, and omega-3 fatty acids. Therefore, they are great for cell function, digestive health, and inflammation. What I love about chia pudding is that you can make a larger batch at the beginning of the week and let it sit in the fridge ready for YOU for several days. This makes it the perfect go-to breakfast or snack for those busy September days. On it’s own, chia pudding is fairly bland and serves as a blank canvas for spices, nut milks, fruit, and crunchy toppings. I’ve provided a basic recipe below which you can then multiply for a larger batch, and stir in whichever flavours you like, and top it with whatever fruit and extras you wish. Once you have the basic formula, the options are endless. You will be thankful for this recipe the next time you’re rushing out the door on a Monday morning.
Basic Chia Pudding:
2 tbsp chia seeds
3/4 cup unsweetened plant-based milk (coconut, almond, cashew, hemp, etc)
Makes: 1 serving
Blend all ingredients in a blender and puree until smooth OR whisk seeds into milk thoroughly. Allow to sit in the fridge for at least 15 minutes or overnight to thicken. Top with fresh fruit, seeds, coconut, nut butter, etc.
Extra can be made ahead of time and left in the fridge for several days.
Optional add-ins/toppings: vanilla, spices, unsweetened shredded coconut, raw cacao powder, fruit, ground flaxseed, hemp seeds, coconut oil, almond butter, raw cacao nibs, protein powder, granola, nuts/seeds
