Healthy Japanese Cooking In Ontario it is not always easy to get local produce because it cannot be harvested in the winter months. Now summer is here and many locally grown vegetables and fruits are available. Why don't we take an advantage of the gifts from summer? There are plenty of reasons to choose local produce. Local produce tends to have more nutritional value due to its short transportation and storage time as well as the harvesting time. Did you know that nutrients are created in produce mostly during the ripening stage? Local produce is usually allowed to ripen fully before harvesting. When it comes to vegetables and fruits, the fresher the better. Also, we can expect fewer pesticides and chemical treatments even in conventional produce, thanks to the short transportation and storage time. They are also more reasonable in price. Plus, you end up supporting local growers and suppliers!! Are you motivated to choose local produce now? Summer vegetables in this recipe, egg plant, zucchini, bell pepper, Kabocha pumpkin, have strong flavours that are perfect for simple cooking such as barbecue or roasting in the oven. The use of vinegar makes this an appetite-promoting dish, which is an important factor in the summer, when we often lose our appetite due to the warm weather.
