Seasonal Recipe: Stir-fried Prawns with Snow Pea Leaves

Ingredients:  8 oz prawns

10 oz snow-pea leaves

2 pieces of ginger

2 tsp mashed garlic

3 tbsp oil

1/2 tsp white wine (optional)

Seasoning (1):  Pinch of pepper

1/3 tsp of salt

Dash of sesame oil

Sauce (1) :  1/3  tsp of salt

3 tbsp chicken broth

Sauce (2):  1 tsp cornstarch

1 tsp oyster sauce

2 tbsp water

Method:

1.  Wash and drain prawns. Marinate with the seasoning (1) for 10

minutes.

2.  Put the snow-pea leaves in hot water for 1 minute, and then  drain it.

3.  Heat 2 tbsp oil, add 1 piece ginger and 1 tsp garlic.  Add the snow-pea   leaves,  sprinkle  with 1/2  tsp wine and stir fry.  Add 1/3 tsp salt, and 2  tbsp chicken broth. Then take the leaves out.

4.  Heat 1 tbsp oil, and add 1 piece ginger, 1 tsp garlic and prawns, and stir fry until cooked.  Add sauce (2), mix well.  Put all the prawns on top of   snow-pea leaves and serve.
