Seasonal Recipe – Healthy Broccoli Soup

What’s more satisfying and comforting than a hot bowl of soup in winter?  Soup can soothe and relax you in an inexplicable way. It’s by far the most comforting food, healthy and delicious too. This Broccoli soup is easy to make as well.

INGREDIENTS:

Broccoli cut into small florets 1cup

Butter 2 tablespoons

Mixed Dried Herbs

Onion chopped 1 medium

Garlic chopped 2-3 cloves

Peeled and chopped Potatoes 1cup

Chopped Carrots 1cup

Vegetable stock 2 1/2 cups

Milk 1 cup

Salt to taste

Pepper powder 1/4 teaspoon

Fresh cream 1/2 cup

Almonds sliced thinly 4-5

 

METHOD

Melt butter in a thick bottomed pan on medium heat.

Add chopped onion, garlic and sauté till onions turn translucent.

Add broccoli florets, potatoes, carrots and cook for around 3-5 minutes.

Add vegetable stock, bring it to boil and cook for 10minutes on medium heat covering the pan.

Strain and cool the vegetables and then blend in a mixer till smooth.

Put the pan back on heat, bring to a boil and add milk then season with salt, dried mixed herbs (Italian seasoning)and white pepper powder.

Add fresh cream, simmer for two to three minutes and serve hot garnished with sliced almonds and carrots.
